To maintain a superior edge, we recommend diamond or water sharpening stones. If you are unsure about the correct technique, we will gladly sharpen the knife for you in our service center. We also regularly organize sharpening courses for the public. Improper sharpening can compromise the aesthetics and functionality of the San Mai technique.
Blade Care:
Even stainless steel requires attention. Microparticles of aggressive substances can create rust-like marks on the surface. For their removal, baking soda with water and a soft cork is ideal. After cleaning, we recommend lightly treating the knife with a fine oil.
