Sabrage is the technique of opening a bottle of champagne with a sabre. This unusual method is used on festive occasions. Basically, it's the end of the neck of the bottle that's been knocked off. The cut of the sabre is guided along the bottle at the seam towards the neck so that the blade hits the glass collar at the end of the bottle. The force of the blow then breaks off the neck of the bottle and the stopper at this point. Before sabrage, the cake is cooled to 3-5 °C, the wire cup and a 3 cm wide strip of staniol at the seam are removed. The Sabrage became popular in France during the Napoleonic Wars, when Napoleonic officers gained access to a number of noble estates. It was shortly after the French Revolution and the sabre was the weapon of Napoleon's dreaded cavalry - the Hussars. The victorious campaign of Napoleon's armies through Europe gave them many reasons to celebrate, during which they opened bottles of champagne with their sabres.
